Volatile sulfur compounds (VSCs) have a large impact on the aromatic bouquet of wines. They impart both positive varietal characters as well as negative characters, such as rotten egg and sewage. Research into the role of five metals commonly found in wine has shown that these metals can either protect or degrade VSCs. Some metals, such as copper, are manageable while the presence of others can have striking impacts on the style evolution of the wine.
